2 cans stewed tomatoes
seasonings to taste--pepper, cayenne, garlic powder, oregano, basil
1 lb hamburger
7 1/2 cups cold water
2 1/2 cups ground cornmeal
grated Parmesan cheese
Fry hamburger and drain the fat. Set aside.
In a pot, pour in stewed tomatoes. Add seasonings to taste. Add
hamburger. Cook over medium heat.
Bring water to a boil in a heavy medium pot over medium heat. Reduce
heat to medium low. As soon as the water starts to simmer, start pouring
in the cornmeal, by handful, in a thin constant stream; stir constantly
with a wire whisk to prevent lumps from forming. When all the polenta
has been incorporated, keep mixture at a constant simmer and stir
polenta constantly with a long wooden spoon for about 30 to 40 minutes.

the sauce over the polenta. Repeat the process with the rest of the
polenta and sauce. Bake at 350 degrees F. for 30 to 40 minutes. Remove
from oven. Sprinkle generously with cheese. Serve immediately.
Potato Pancakes (Placki Kartoflane)

This is a typical Polish dish. This should be served hot, preferably
directly from the frying pan or you can keep them warm in the oven.
3 large potatoes
1 small onion
salt and pepper
oil for frying
300 ml sour cream
Peel potatoes and onion and grate coursely. Mix well and squeeze out as
much excess liquid as possible. Season. Pour enough oil in frying pan.  
When pan is hot, put in large spoonfuls of the potatoe mixture and
immediately flatten. They should be quite thin. When the underside is
brown, turn it slowly to cook the other side. Serve with sour cream.
Serves 4.
Minestroni Soup

1/4 lb small white haricot (navy) beans
3 tbsp oil
2 onions, peeled and sliced
2 cloves garlic, crushed
2 -3 slices bacon
4 tomatoes, peeled, seeded and chopped
1 small glass red wine
1 tsp marjoram, chopped
1/2 tsp thyme, chopped
2 carrots, peeled, and cut into cubes
2 potatoes, peeled, and cut into cubes
1 small turnip, peeled and cubed
1 -2 stalks celery, chopped
1/2 small cabbage, shredded
1/2 cup macaroni (little shells, stars, etc.)
1 tbsp chopped parsley
salt and pepper
greated Parmesan cheese.
